Description
This Polenta au Gratin features savory polenta dumplings in a sage spiced tomato sauce. Cooked under the broiler, the polenta dumplings incorporate grated parmesan cheese, nutmeg, and a touch of pepper for a savory, melty dumpling. - 0.5 liters milk
- salt
- 125 grams polenta (pre-cooked)
- ground black pepper
- ground nutmeg
- 1 Tbsp. butter
- olive oil
- 100 grams Parmesan cheese (grated)
- olive oil
- 3 garlic cloves (diced)
- 1 bunch sage
- 800 grams crushed tomatoes
- 1 tsp. sugar
- 1 tsp. balsamic vinegar (optional)
- salt
- ground black pepper

Directions
- In a high-sided pot, heat up the milk with a pinch of salt. When it starts to boil, sprinkle in the polenta. Season to taste with black pepper and nutmeg. Lower the heat and stir until thickened. Then stir in the butter.
- Lightly oil a baking tray and pour in the polenta. Smooth out until even and 1 1/2 centimeters thick. Set aside.
- Separately, in a heavy-bottomed pot, heat up a drizzle of olive oil. Add the garlic and 3 large leaves of sage. Stir and quickly add in the tomatoes, sugar, balsamic vinegar (optional), and salt and pepper to taste.
