- 1.25 kilograms beef steak (gravy ,or chuck,cut into 3-4 cm pieces)
- 3 brown onions (medium, peeled, roughly chopped)
- 4 cloves garlic (3- ,peeled and roughly sliced)
- 2 1/2 Tbsp. ground coriander
- 1 1/2 Tbsp. ground fennel
- 1 1/2 Tbsp. ground cumin
- 1 tsp. ground black pepper
- 15 dried chillies (10- ,seeds removed, cut into small pieces, rehydrated in hot water for 20 minutes, reserve 1 cup chilli water for cooking)
- 4 stalks lemongrass (white part only, dry outer layers removed, finely sliced)
- 3 cms galangal (fattest part, peeled and finely sliced)
- 3 cms fresh ginger (peeled and finely sliced)
- 1 Tbsp. tamarind paste (– easily found in a jar at supermarkets or Asian grocers)
- 2 Tbsp. brown sugar
- 1 1/2 tsp. salt
- 1/4 cup water
- 1 cinnamon stick
- 4 cloves
- 6 cardamom pods
- 800 mL coconut milk
- 1 cup water (reserved chilli)
- 150 grams kerisik (150g desiccated coconut required – see method below)
- brown sugar (Extra)
- salt (to balance at the end)
