The first time we made these they came out way too spicy for me (I had to drink lots of coconut rice milk) although fine for my partner. I didn't make guacamole that time or take out the pepper seeds though. I usually like medium-level spicy. Now we jave made them with only one jalapeño pepper and no poblano peppers and they are quite good. 😋
