- 5 oz. spinach (shredded, or silverbeet)
- 1 oz. carrots (cut in ribbons)
- 2 oz. pitted black olives
- 1 oz. chopped almonds
- salt
- pepper
- 1 egg
- boiling water

Directions
- Brown cumin spice in a dry pan over heat for a few seconds, add 1/4 cup of water and the spinach/silverbeet and carrot. Add salt and pepper. Cook until dry, stirring to prevent food sticking to the pan. Set pan aside.
- Poach egg in a small saucepan of boiling water. Serve spinach with poached egg, topped with olives and chopped almonds, salt and pepper.
