  • 9 tablespoons butter (chopped, at room temperature)
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup ground almonds
  • 3/4 cup self-raising flour (sifted)
  • 7 plums (stoned, quartered)
  • 1 tablespoon brown sugar
  • whipped cream (to serve)

    Directions

    1. Preheat oven to 350°F. Lightly grease an 8 x 12 inch baking pan. Line with baking paper, extending 1 inch over the two long sides.
    2. In a large bowl, using an electric mixer, beat the butter, sugar and vanilla together until pale and creamy. Add eggs, one at a time, beating well after each addition.
    3. Lightly fold in almonds and flour. Spoon batter into pan, smoothing top.
    4. Scatter over the plums and brown sugar. Bake for 40 minutes. Serve with whipped cream.
