- 400 grams white bread flour (or Tipo '00' flour)
- 20 grams dried yeast
- 50 grams milk
- 1 Tbsp. extra-virgin olive oil
- 1 tsp. sea salt
- 200 mL lukewarm water

Directions
- In a large bowl, put the yeast with 100 ml lukewarm water and 5 tablespoons flour and mix gently.
- Let rise for 30 minutes this leaven.
- In the bowl of food processor, combine the flour, the leaven, 100 ml lukewarm water remaining , milk, olive oil and salt until the dough forms a ball.
- The dough should be soft but not sticky. If it is too sticky, add a bit more flour and process for another minute.
- Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
