- 6 tomatillo
- 1/2 onion (medium sized)
- 1 clove garlic
- 1 chile (cerrano or jalapeño)
- 2 cups water
- 1/2 cup cilantro (or coriander)

Directions
- Peel and wash the tomatillo, wash the chile and the coriander, and peel the ½ onion and garlic. Combine water, tomatillo, onion, garlic and chile in a medium sized sauce pan.
- Boil and reduce to simmer until the tomatillos are tender. While it cooks, chop the coriander coarsely.
- Let cool for a moment and blend together with the coriander.
- Cool completely and serve room temperature.
