The flavor and texture of these cookies is phenomenal. Be absolutely sure to allow your butter to warm slowly to room temperature or the cookies will come out flakey and hard to handle.
I used a blender and processed the pistachios to an almost powder like consistency and then added them to the dough mixture.
The only have two complaints about this recipe.
The first is the baking time; it was completely inaccurate. I ended up buming the temperature up to 350 and baking them for 16 minutes.
The second complaint is about the website that provides the recipe. from now on I will no longer follow any recipe that comes from that website. The user experience/layout of the site is horrendous. You have to scroll past a myriad of advertisements just to get to the recipe list, and then scroll through even more advertisements to get to the author's life story as he or she explains everything about this cookie. Then you have to scroll through even more ads to get to the directions. Never again will I use their site.
