- 3 bananas (medium, ripe, if unripe, just pop them in the oven at 300F for 10 minutes)
- 1 large egg
- 1/3 cup vegetable oil
- 1/4 cup sugar (use another 1/4 cup if you prefer your muffins sweeter)
- 1/4 cup almond milk
- 1 tsp. vanilla extract
- 2 tsp. matcha powder
- 1 1/4 cups white whole wheat flour (or use 1.5 cups of AP flour)
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup pistachios (roasted and lightly salted)
- 1 Tbsp. olive oil (or greasing spray for the muffin tray)
