- 3/4 cup unsalted butter (softened)
- 2 cups sugar
- 3 cups cake flour
- 1 1/2 tsp. baking powder
- 3/4 tsp. baking soda
- 3/4 tsp. salt
- 1,080 grams egg whites (room temperature)
- 1 tsp. pure vanilla extract
- 2 cups champagne (room temperature)
- red food coloring (optional)
- 3 sticks unsalted butter (softened and cut into cubes)
- 3 cups confectioners sugar (sifted)
- 1/4 cup champagne
- 1 tsp. pure vanilla extract
- 1 pinch salt
- 3 drops food colouring (optional)
- 2 cake (8" or 9" round Champagne, layers, broken uup into pieces)
- 2 cups frosting (the Champagne)
- 1 lb. white chocolate couverture (I used Callebaut Belgian White Chocolate because I love the quality taste, but you can also use chocolate candy coating--note that white chocolate doesn't get as candy-hard as the candy coating)
- white chocolate (Some coloured, coating melts, if you want to add colour to the coating)
- sprinkles (Gold Star, optional)
