  • 1 pineapple
  • 4 ounces palm sugar (or brown sugar)

    Directions

    1. To prepare the pineapple, slice 1/4 inch off the top and bottom. Stand upright and slice off the skin. Cut the fruit lengthwise into 8 equal wedges and remove the core.
    2. Place the palm sugar and 1 cup water in a small saucepan on high heat. Bring to a boil. Boil for 10 mins, until the syrup thickens.
    3. Serve the pineapple drizzled with the syrup. Sprinkle with mint.
