This was fantastic. My girlfriend’s mother is a seasoned baker, and she absolutely loved it. The cake is moist and flavorful, and goes perfectly with the pineapple. The ground almonds gives the cake a slightly gritty texture.
I made 2 changes. First, I used white rice flour instead of cake flour, and I added maraschino cherries. I will definitely make this again.

Great. Might try a 13x9 pan instead---more pineapple to cake ratio!
So, more topping and maybe a bit more liquid--- it was a nice, rich, pound cake-- very dense.
