I made this with a few changes.....I used pineapple chunks instead of crushed pineapple. I really enjoyed the little fruit crunch in there. I also subbed in 1/2 cup brown sugar for white and added a little shredded coconut. All in all it is a very easy recipe and I like that it doesn't use dairy. It was moist and delicious and stayed moist over the 3 days it took to finish it. The only negative I would say is that it was a bit too sweet and I have quite a sweet tooth ..lol. Next time a little less sugar ...this recipe is definitely a keeper. Thanks for sharing!
