Yummy. I also used the juice from the canned pineapple and chicken stock. i think just using the pineapple juice would have made it to sweet. It does take you to the Trader Joe's web page then you have to search for the recipe. Will be making again.

Great recipe! The pineapple and red pepper really brightened up the quinoa. I only had fresh pineapple and no juice so I used low sodium chicken stock to make the quinoa. I'm thinking that using all pineapple juice might make the dish too sweet or reduce the sweet and savory flavor elements but this recipe was so good I'm going to give it a try. Also used a 1/2 tsp of crushed red pepper for a bit more zip.

Fantastic flavor and easy to make. I used half the amount of pineapple juice and it worked out fine. I would make it again
