- olive oil (to taste)
- 12 corn tortillas (small, if gluten sensitive, make sure certified gluten free)
- red cabbage (optional)
- carrots (optional)
- dressing (Pineapple Miso)
- 3/4 cup fresh pineapple chunks (or frozen)
- 2 Tbsp. soy sauce (if gluten sensitive, use Gluten Free certified Tamari)
- 1 Tbsp. miso paste
- 1 tsp. crushed garlic
- 1/4 cup loosely packed fresh basil leaves (stems removed)
- 1 tsp. sesame oil
- 1 tsp. crushed red pepper flakes
- 1/4 cup plain yogurt (replace with dairy alternative if vegan preferred)
