- 6 oz. carrots (peeled and cut into 1-inch chunks)
- 1/2 cup sweetened shredded coconut (1-3/4 ounces)
- 1/2 cup granulated sugar (2-1/2 ounces)
- 1/4 cup light brown sugar (1-3/4 ounces, packed)
- 2 large eggs (room temperature)
- 3/4 cup coconut oil
- 1/2 cup pineapple juice concentrate (frozen, thawed)
- 1/2 cup coconut milk (canned)
- 1/2 cup confectioners' sugar (2 ounces)
- 3 1/4 gelatin sheets (silver, or 5-1/2 teaspoons powdered gelatin)
- 1/2 cup pudding (pineapple)
- 4 oz. cream cheese (room temperature)
- 1 cup coconut cream (chilled Trader Joe’s, or coconut milk, do not shake, use solid off the top)
- cake (Carrot, layers, trim top of layer to level, reserve cake trimmings.)
- mousse (Pineapple Coconut)
- cake crumbs (Reserved, crumble and toasted)
- macaroon (nest, basic macaroon recipe and shape it in a muffin tin or mold, optional)
- chocolate easter eggs (optional)
- matcha powder (optional)
- coconut flakes (optional)
