- 1 Tbsp. coconut cream (I didn't have coconut cream on hadn't so I skimmed the fat from the top of a can of coconut milk)
- 3/4 cup cake flour (+ 1 tbsp, 110 grams)
- 1/2 cup powdered sugar (+ 2 tbsp, 90 grams)
- 2 Tbsp. custard powder (I bought mine from amazon, but I have also seen this at various supermarkets and World Market)
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- 2 Tbsp. butter
- 20 oz. pineapple chunks (1 can, or crushed, drained)
- 2 Tbsp. brown sugar
- 1 tsp. cornstarch
- 1 tsp. water
- 2/3 cup heavy cream (at room temperature)
- 1 cup milk (plus 1 tablespoon, at room temperature)
- 1 large egg (at room temperature)
- 1/3 cup sugar
- 1/2 cup cake flour (leveled)
- 3 1/2 cups bread flour (leveled)
- 1 Tbsp. active dry yeast
- 1 1/2 tsp. salt
- 1 large egg
- 1 Tbsp. coconut cream
- 1 tsp. water

A fair amount of work, but the taste was spot on! Next time I might make 20 smaller buns. This recipe is a keeper. The buns taste just like rhe ones we had at our local dim sum restaurant.
