Description
One sip of this classic cocktail that’s known as the national drink of Puerto Rico and you’ll be transported to a beach in the tropics. If you like, you can cut up your own pineapple, freeze some chunks overnight to use in the drinks, and then save some small fresh pieces for garnishing the glasses. Look for cream of coconut such as Coco Lopez with cocktail supplies (don’t use the thicker, unsweetened coconut cream that’s sometimes sold alongside coconut milk). Don’t forget paper umbrellas to tuck into the drinks! The recipe, which makes about 4 cups, is a Yummly original created by Ashley Strickland Freeman.
Ingredients
- 2 cups ice cubes
- 1 1/2 cups frozen pineapple chunks (8 oz.)
- 1/2 cup pineapple juice
- 1/2 cup cream of coconut (such as Coco Lopez or Coco Real)
- 1/2 cup white rum
- 1/2 cup dark rum
- 1 Tbsp. lime juice (or 2 Tbsp. for a tarter flavor)
- 4 pineapple slices
- 4 maraschino cherries (with stems)
Directions
- Combine ice, frozen pineapple, pineapple juice, cream of coconut, white and dark rums, and lime juice in a blender. Blend until smooth.
- Pour mixture evenly into 4 glasses. Garnish each glass with a pineapple slice and cherry.
