- 3/4 cup toasted coconut
- 1 cup evaporated milk (undiluted, use it straight from the can)
- 1 cup fresh pineapple (finely diced)
- 4 oz. rum (optional)
- 1/3 cup butter (soft)
- 1 tsp. vanilla extract
- 2 cups powdered sugar (icing sugar)
- 3 Tbsp. dark rum (approximately)
