- 3 cloves garlic (grated or finely chopped)
- 1/4 cup flour
- 2 1/2 cups whole milk
- 3/4 tsp. cayenne (or hot paprika)
- 1 1/2 tsp. smoked paprika
- 1 tsp. dry mustard
- 2 cups cheddar (shredded sharp yellow)
- 2 cups manchego cheese (grated)
- 8 oz. piquillo peppers (1 jar, in water, drained and diced or 2 4-ounce jars diced pimiento peppers, drained)
- scallion (thinly sliced, cut on an angle, optional)
- fresh flat leaf parsley (chopped, optional)

- Spanish olives (dressed with lemon juice, EVOO, and sea salt (for an entrée))
