A recipe I adapted from one of my Mom's cooking magazines.
Ingredients

4 SERVINGS
- 3 cups cheddar (grated sharp yellow, 1/2 pound)
- 3 Tbsp. mayonnaise
- 1 Tbsp. Dijon mustard
- 4 oz. pimento peppers (drained and coarsely chopped)

Directions
- In a food processor, combine cheddar, mayonnaise, and Dijon mustard and process until smooth.
- Add pimentos.
- Pulse until incorporated.
- To store, refrigerate up to 2 weeks.
