- 2 scotch bonnet (or habanero peppers)
- 2 limes (juice of or 4 key limes)
- 1 handful fresh thyme sprigs
- 1 handful fresh marjoram (sprigs)
- 2 Tbsp. chopped parsley (coarsely)
- 1/3 cup distilled white vinegar
- 1 Tbsp. black pepper
- 1 Tbsp. paprika (mild)
- 2 tsp. sea salt (or pink)
- 1 tsp. Madras curry powder
- 1 tsp. ground cloves
- 2 Tbsp. olive oil
- 1/2 onion (sliced into crescents)
- 1 cup pigeon peas (fresh, frozen, or canned)
- 2 garlic cloves
- 1 1/2 tsp. seasoning (Bajan, see above)
- 3 sprigs thyme (each of, marjoram, and 2 green onions, tie together with a piece of cooking twine)
- paprika (pinch of mild)
- 1 pinch black pepper
- 2 cups water
- 1 cup short grain rice (white, rinsed)
- 1 scotch bonnet (or habanero pepper)
- 1 tsp. adobo seasoning (can be found in the Latin product section at most large grocery stores)
- 1 tsp. onion powder
- 1 tsp. sea salt (or pink)
- 2 garlic cloves (pressed, minced)
- green onions (chopped, optional)
