- 100 grams old ginger

- 80 grams brown sugar (adjust to taste)
- 500 mL water
- 300 mL black vinegar (sweet, I used Doggie brand - add slightly more if required)
- 100 mL black vinegar (Zhe Jiang, optional)
- salt (to taste)
