This is a great recipe for quick-pickling a wide variety of veggies. I mostly do sweet onions but also have had great results with cucumbers. Next I am going to try green beans. PS-I add a teaspoon or two of red pepper flakes a nice little bite. I love the fact that this recipe does not call for huge amounts of salt.

This is a great basic recipe. I more or less followed the recipe. This recipe leaves plenty of room to customize the flavor profile to your liking.
I was going to serve mine with grilled hotdogs, as a relish, so I made mine slightly on the sweeter side, with just a little heat. Everyone loved it. Even my picky teenagers loaded up with it after giving it a try! It's a keeper recipe.
