- 1 yellow onion (medium, finely chopped)
- 1 1/2 cups arborio rice
- 1 cup dry white wine
- 4 cups vegetable (or so, broth)
- 3/4 cup pesto (I recommend Bestest Pesto, it makes plenty)
- 1/2 tsp. salt (more or less depending on how salty your broth and pesto are, so taste for salt often)
- black pepper (fresh)
- 1 lb. zucchini (cut on on a bias into chunky half moons)
- 1 Tbsp. olive oil
- 1/2 tsp. salt
- black pepper (fresh)
- 3 cloves garlic (minced)

Perfect texture, great flavor. The key is constant stirring and adding the warm broth in small amounts. I topped it with freshly grated Parmesano Reggiano, garnished with artichoke hearts and cherry tomatoes.

Yummers. Also made a dairy free pesto, and subbed the zucc for snap peas and shrimp. Will make again.

Very delicious and we used a dairy free pesto. Next time we will use 3/4 cup wine and a little less vegetable stock as a wee bit salty. Very delicious through
