Description
While still green in color, this recipe for homemade pesto puts a slight twist on the original. Made with fresh chives, scallions, and mint, this green pesto has a unique herb flavor, differentiating it from the traditional basil-based pesto. Red wine vinegar, parmesan, and garlic add robust and savory flavor to this delicious green pesto. Peanuts add a unique crunch. Blended together until creamy and smooth this pesto is best served over a bed of your favorite pasta or used as a spread on your favorite sandwich.
Ingredients
- spaghetti (to taste)
- 2 garlic cloves (chopped)
- 2 Tbsp. peanuts (shelled)
- 3 Tbsp. olive oil
- 10 chive (large, sprigs)
- 5 chive (small, sprigs)
- 1 scallion (white part)
- 1 mint leaf (fresh)
- 1 tsp. red wine vinegar
- 3 Tbsp. hot water
- salt
- ground mustard (to taste)
- grated Parmesan (to taste)
Directions
- Cook the spaghetti in water, salt, and a drizzle of olive oil.
- Heat a little olive oil in a frying pan, and saute the garlic cloves and the peanuts for a few minutes.
- In the food processor, add the chives, garlic cloves, peanuts, scallion, mint, vinegar, and the remaining olive oil. Beat to a homogeneous cream. Add 3 tablespoons of hot water while the cream is forming. Season with salt and ground mustard.
- Add the cream to spaghetti, sprinkle with cheese and chives.
