Garlic under the skin and lemon wedges inside make for a tasty bird! Do check the temperature early and often—my 4 lb chicken was done after only 40 minutes at the lower oven temp.

Amazing.
I didn’t have white wine, so substituted with some chicken stock for the marinade, and left the just as is.
