- 16 oz. ground chicken (2 package, turkey or lean ground beef)
- 2 eggs
- 2 cups zucchini (grated, (2 medium-size zucchini should be enough). Squeeze some of the water out of the shredded zucchini)
- jalapeno (grated or minced. Removing the seeds will control the heat.)
- 1 bunch scallions (about 6-8, minced. Really run your knife over them, see notes.)
- 2 limes (zest half of one and reserve the zest.)
- 1/2 cup breadcrumbs (plain)
- 1 tsp. spearmint (dried, or herb of your choice. Do not use peppermint.)
- sea salt (or kosher salt to taste)
- olive oil (for cooking)
- thai basil
- aleppo pepper
- fresh herbs (like mint)
- greek yogurt
- creme fraiche
- cilantro (and/or parsley)
- marinara (or sour cream for dipping)
- lime wedges
