Best beans ever. Instead of bacon we used "Better than Bouillion" paste to make it vegetarian. Absolutely wonderful.

This was a win at our house. I am always searching for way to make bean special. I don't do a whole lot of measuring when I cook I do more of a per taste thing. I put the bay leaves in earlier when I cooked the beans as that is how I usually cook beans from basic with 3 bay leaves and a few shakes of ground cloves (cuts stomach *gas* upset). And I add pink Himalayan salt and fresh tri color ground pepper as I go in several stages ( Cooking beans, cooking base, then cooking altogether). I altered a bit how I cooked it as I added the onion, garlic and bell pepper and cooked till everything was starting to caramelize and turn yummy then I added the bacon and cooked that. Once that was all done I added all the spices one at a time and cooked this all together to make a nice base.........then I added the beans and covered with water. Then cooked from there........this was very tasty
