- 1/8 cup grapefruit juice (about the juice of one half grapefruit)

- 1/2 cup raisins
- 6 oz. sliced black olives (drained)
- 1/2 cup radishes (chopped)
- 1/2 cup cherry tomatoes (halved if they're large)
- 1/2 cup red onion (thinly sliced)
- 2 apples (peeled and chopped, squeeze a little grapefruit juice on them to keep from discoloring)
- 1 can white beans (rinsed and drained)
- 1/4 cup parsley (chopped)
