- 1/4 cup fortified wine (Banylus, or ruby port)
- 1 star anise pod (optional)
- 4 boneless duck breast halves (with skin)
- kosher salt (to taste)
- fresh cracked black pepper (to taste)
- 1 1/2 cups red seedless grapes (halved)
- 1 tsp. chopped fresh thyme (or a few sprigs if you are lazy)
- 1 cup mâche (loosely packed, or watercress leaves, optional)

The sauce ended up a bit too sweet for my taste, but the flavour was really nice. Also the quantities were a bit too much for the sauce. The grapes are a nice touch. Overall good.
