- 1 1/2 cups extra-virgin olive oil (may be more of, for frying.)

- 2 Tbsp. flour
- 700 mL whole milk
- 350 oz. hard cheese (grated yellow)
- 1 pinch salt (and pepper.)
- 1 egg
- 1/2 tsp. ground nutmeg
