- 8 oz. macaroni (1 2/3 cups measured in a 2 cup glass liquid measure. Note that this measure will only work for macaroni and probably not a larger pasta shape. Weighing is recommended.)
- 1/4 cup butter
- 1/3 cup all-purpose flour
- 3 cups whole milk (recommend whole milk here you can, 3%)
- 7 oz. cheddar cheese (Good aged white crumbly, crumbled)
- 3 oz. cheddar cheese (Another variety orange sharp, or cold-packed cheddar, grated or crumbled)
- 1/2 tsp. kosher salt (little less if using table salt)
- 1/4 tsp. chili powder (regular)
- 1/8 tsp. garlic powder
- 0.5 oz. cheddar cheese (Additional old, grated grated)
- 1/4 tsp. chili powder (chipotle)

It’s always awesome.
I just use whatever cheese I have leftover before it gets moldy, and still works great.

Excellent! Only thing I changed is instead of orange sharp cheddar I used Smoked White cheddar. It gave it a delicious Smokey flavor that everyone liked. Delish!

Used 3 different cheddars and it was a little rich for my taste. I might try again with different cheeses and maybe some veggies.

10-19-21. Did not add chili powder, quick and easy, used half 1% milk and half 15% cream, added veggies. Very creamy and delicious

Really good and very creamy, cheesy! Didn't change anything but added fresh tomato chunks on top prior to baking.

The title is no lie... This mac and cheese is sooooo creamy! Was a HUGE hit with the kiddos!

Very very good. I used just 2 more oz of cheese and made it extra creamy. Those who say it isn’t creamy just can’t cook.

A little grainy, but perhaps because I used preshredded cheese that was on hand. Otherwise yummy!

Pretty good, way to saucy. Not super creamy. Didnt really have the consistency of a mac and cheese

I made 8 servings and made it with the pasta (farfalle) cheeses (cheddar, mozzarella, gruyere, asiago), and milk (5 cups 2% + 1 cup whipping cream). I still matched the weights and measurements. Wow! I thought that I would have enough leftover to make some individual servings to freeze as one commenter suggested. Nope! Even my picky eater kid had 2 helpings while husband and my other boy had 3! And the chipotle? Genius! Long story, short - nothing left to freeze!
I am looking forward to trying it with the recommended pasta and cheeses but it seems pretty flexible. Will definitely be making again!

I have made this several time. Always a big hit either main dish or side. I have experimented with a variety of cheeses- choose flavorful, melty cheeses.
