Made this cupcake last night. It was so good! As promised it was moist and so chocolatey. My friend said it was my best ones by far!
I tweaked the recipe a bit - used brown sugar instead of white / caster. I used the same 1 2/3 cup measurements but made sure to pack it in.
For the frosting, I probably didn't soften the butter enough so I just sat the bowl in a bowl of warm water to soften it a bit. Hehe. I think I only used about 2 1/2 - 3 cups of powdered sugar as it was getting really dry (added a couple more tbsp milk too) and it was already sweet enough for me.
I ended up with quite a lot of excess frosting too. I could have frosted probably AT LEAST another batch of cupcakes, maybe even 2! so i stored that in the fridge and might make a couple more batches next week. :)
A day after, despite just having the cupcakes on the stand in the kitchen it was still super soft and lovely. Absolutely loved this recipe! :)
