- 1 cup firmly packed light brown sugar
- 3/4 cup granulated sugar
- 2 large eggs (room temperature)
- 2 tsp. coffee extract (or vanilla extract)
- 3 1/4 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 cups pecans (chopped & whole, reserve some for tops of cookies)
- 2 cups semi sweet chocolate chips (plus more for tops if desired)
- 1 cup chips (caramel, or salted caramel chips, optional)
- 1/2 cup milk chocolate chips (or semi sweet chocolate chips I use Ghirardelli)
- sea salt (Optional: Sprinkle of, or Sprinkles)
