- 2 1/2 lb. potatoes (peeled, russets are my favorite, but yukon golds are delicious too. If you use golds, you can leave the skin on for a more rustic dish, and cut into 1" cubes)
- 6 Tbsp. salted butter (divided)
- 1 1/2 Tbsp. herbs (Chopped, I prefer a blend of rosemary, sage, and oregano)
- 1 1/2 tsp. garlic (minced)
- 1 1/2 tsp. coarse salt
- 2 dashes white pepper
- 3/4 cup milk (or cream for an even more decadent mashed potato)
