  • 1 tablespoon sesame seeds
  • 200 grams quinoa (rinsed. See my Tip, above)
  • 480 milliliters vegetable stock
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons extra-virgin olive oil
  • 4 onions (medium, peeled, and cut in to 8 wedges through the root)
  • 1 sweet potato (large, roughly 200g, 7oz, peeled and cut in cubes of about 2cm, about 1in)
