- 2 Tbsp. pumpkin seeds
- 2 Tbsp. sunflower seeds
- 1 Tbsp. sesame seeds
- 200 grams quinoa (rinsed. See my Tip, above)
- 480 mL vegetable stock
- 1 tsp. ground coriander
- 1/2 tsp. ground cinnamon
- 3 Tbsp. extra-virgin olive oil
- 4 onions (medium, peeled, and cut in to 8 wedges through the root)
- 1 sweet potato (large, roughly 200g, 7oz, peeled and cut in cubes of about 2cm, about 1in)
- salt
- freshly ground black pepper
- 2 limes
- extra-virgin olive oil (The same volume of, as lime juice, or slightly less)
- 2 tsp. toasted sesame oil
- 1 Tbsp. soy sauce
- 1 garlic clove (crushed)
- 1 chilli (finely chopped, optional)
- 5 spring onions (or lots of chives, finely chopped)
- fresh basil (Lots of, or fresh coriander, chopped)
- 1 tsp. sugar
