  • 14 ounces penne pasta
  • 8 strips bacon (cut into thin strips)
  • 4 spring onions (finely chopped)
  • 12 ounces button mushrooms (sliced)
  • 10 ounces low-fat sour cream
  • 4 ounces baby spinach
  • 1 ounce Parmesan cheese (grated)

    Directions

    1. Cook the penne, according to package instructions. Drain, return to pan and cover to keep warm.
    2. Meanwhile, for the sauce, cook the bacon in a medium saucepan on a medium-high heat for 3 mins, stirring, until brown and crisp. Add the spring onion and mushroom and cook 3 mins, stirring, until soft. Add the sour cream and spinach and season to taste. Cook 1-2 mins, until heated through. Add to the warm pasta and toss together over medium heat. Sprinkle with Parmesan to serve.
