  • 2/3 pound penne pasta
  • 1/3 pound frozen peas
  • 1 pound salmon fillets (cubed)
  • 1/2 pound sour cream
  • 3 tablespoons lemon juice
  • 1/4 pound arugula

    Directions

    1. Cook the pasta according to the package instructions. About 2 mins before the end of the cooking time, remove about 3/4 cup of the water and set aside. Then add the peas to the pasta and drain in a colander.
    2. Add the reserved cooking water back into the saucepan, then add the fish and cook over a low heat for about 2 mins. Stir in the sour cream, lemon juice, pasta and peas and arugula. Warm through and season with salt and pepper to taste. Serve immediately.
