  • 7 ounces penne pasta
  • 1 tablespoon vegetable oil
  • 1 onion (medium, thinly sliced)
  • 1 clove garlic (crushed)
  • 1 pinch red pepper flakes
  • 1 chorizo sausage (cured, thinly sliced)
  • 14 ounces chickpeas (drained and rinsed)
  • 2 tablespoons chives (chopped)
  • 2 tablespoons grated Parmesan cheese

    Directions

    1. Cook pasta in a saucepan of boiling salted water according to package directions. Drain well.
    2. Meanwhile, heat oil in a large skillet on medium heat. Add onion, garlic and red pepper flakes and sauté for 3 mins or until soft. Add chorizo and sauté for 5 mins or until browned. Add chickpeas and sauté for 2 mins or until heated through.
    3. Divide pasta among serving bowls. Top with chorizo mixture. Sprinkle with chives and Parmesan cheese.
