- 3 turkey Italian sausage (links, 3/4 pound hot, or use pre-cooked chicken or turkey sausage of your choice)
- 3 Tbsp. olive oil (depending on the pan and whether you use pre-cooked sausage)
- 3/4 lb. sliced mushrooms (thickly, or more, I used brown Crimini mushrooms)
- 1/2 red onion (cut into thin slivers)
- 5 cloves minced garlic (finely)
- 1/2 tsp. red pepper flakes (more or less to taste)
- 10 oz. baby spinach leaves (or more)
- 1 1/4 cups chicken stock (I used homemade chicken stock, but you can use canned chicken broth)
- 1/2 lb. penne pasta (2 cups dry, use whole wheat penne or Dreamfields for the South Beach Diet; you can also make this lower in carbs by reducing the amount of pasta)
- 1 cup low fat mozzarella cheese
- 1/4 cup grated Parmesan cheese (freshly, plus a little more for serving if desired)
- ground black pepper
- salt

The description, photo, recipe is nothing what’s described. Came home with all the ingredients and it’s not the same.

This was fantastic! I’d had a couple of glasses of wine & cooked this on a whim, mostly because I had all of the ingredients already. I added halved grape tomatoes, for some color. I used the whole can of chicken broth & let it cook at a low boil for perhaps 10 minutes (which thickened the sauce beautifully). I also threw in some feta cheese & Italian seasoning. It turned out so pretty - with the green spinach & tomatoes. I will definitely make this again. And again, and again...

I used cherry tomatoes instead of mushrooms and added fresh basil. Using our homemade Italian sausage it was outstanding!

Delicious- I omitted the mushrooms because my partner isn’t a big fan of them. I also used goat cheese for the finishing touch.

This is my “go-to” recipe for a weeknite dinner. It’s great just as directed. However I have made this a dozen times with a few modifications to fit my flavor profile:
- Used mini penne to reduce carb/starch content
- Used sun-dried tomatoes (dried, not jarred in oil) and added it when I added back the chicken sausage
-Used precooked chicken sausage (mine is Sabatino’s if you are in So Cal) - saves time and easy to reheat
- Used the cooked pasta water (1 Cup) to gradually add to sauce after pasta is added to thicken sauce
- Keep extra Chicken Stock on hand to add to makes saucier
-Use Chicken Stock vs Chicken Broth. Makes for aire flavorful dish

It was very easy and had a lot of flavor. I substituted artichoke hearts for spinach. Family raved about it.

Love this recipe. It's good like it is, but could add carrots, and or celery or other veggies, like peppers or zucchini for variation.

This recipe is incredible. I substituted turkey sausage for spicy Italian sausage because that's what I had on hand, and added a little extra cheese. My family loved this meal and even wanted to drink the cheesy-chicken broth liquid out of the pot! Will definitely make this again. Thanks for sharing!
