- 2 Tbsp. Italian parsley (finely chopped)
- 1 tsp. fresh thyme leaves (finely chopped)
- 1/4 tsp. dried oregano (crumbled)
- 1/2 cup red onion (finely chopped)
- 1/2 Tbsp. red wine vinegar
- 3/4 tsp. salt (plus more if desired)
- 3 cups green cabbage (thinly sliced)
- 36 corn tortillas (small, street-taco size, depending on whether you plan to double them up)
