  • 1 tablespoon vegetable oil
  • 28 ounces pears (in natural juice [or in cranberry juice, if available] drained, juice reserved)
  • 2 tablespoons sugar
  • 2 oranges

    Directions

    1. Sift flour into large bowl; make a well in the center.
    2. In a bowl, whisk together milk, eggs, egg white and oil. Gradually whisk into flour to form a smooth batter. Set aside 30 minutes.
    3. Combine reserved pear juice and sugar in a saucepan. Heat on low 2–3 minutes, stirring, until sugar dissolves.
