Pear & Kamahi Honey Frangipane Tart

  • 1 1/2 cups plain flour
  • 1/2 cup icing sugar
  • 1/4 teaspoon salt
  • 113 grams unsalted butter (very cold, or frozen, cubed)
  • 1 large egg
  • 85 grams butter (softened)
  • 1/3 cup cane sugar (blond)
  • 1/3 cup honey (firm, I used Kamahi, courtesy of J Friend & Co – this is a pain to measure so I guesstimated with a 1/3c measure in sight :P)
  • 3/4 cup ground almonds (best to use commercially ground as they are finer and the resulting frangipane will be smoother)
  • 2 teaspoons flour
  • 1 teaspoon cornflour (the white stuff)
  • 1 large egg (very)
  • 1 teaspoon vanilla (real, optional)
  • 3 pears (peeled, halved, cored and sliced)
