- 1 cup all-purpose flour (plus more for surface)
- 6 Tbsp. unsalted butter (chilled, cut into pieces)
- 1 large egg (whisked)
- 1 qt. water
- 1 1/3 cups sugar
- 2 bosc pears (Large, ; peeled, cored, and quartered)
- 1 vanilla bean (split)
- 1 cinnamon stick
