- 2 Tbsp. sesame oil (you’ll need more for the peanut sauce below*)
- 2 tsp. chopped garlic (or minced)
- 1 cup shredded carrots
- 1 cup cabbage (thinly sliced, I use red)
- 1 large bell pepper (thinly sliced, I use red)
- 3 zucchini (large, spiralized into noodles*)
- 2 chicken breasts (large, cooked & shredded, about 2–3 cups*)
- 1 Tbsp. sesame seeds
- 1 handful cilantro
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1/3 cup soy sauce (I use reduced sodium)
- 2 Tbsp. sesame oil
- 2 Tbsp. rice vinegar
- 2 tsp. fresh ginger (minced)
- 2 tsp. Sriracha (or any hot chile sauce)
