- 3 cups oats (old fashion, – ground into flour)
- 1/2 cup flax seed meal (chia seeds work as well)
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 2 cups dates (depending on how sweet you like it, soaked in hot water for about 15-20 minutes to soften)
- 3 bananas (ripe)
- 1/2 cup peanut butter (any nut butter can work here)
- 2 Tbsp. coconut oil (melted)
- 2 cups almond milk (unsweetened)
- 1 Tbsp. vanilla extract
- 1 cup rolled oats
- 1 cup vegan chocolate chips

Even though toothpick inserted in middle came out clean, it was still too soft and creamy to slice and eat like any other banana bread. I ate it with a spoon out of a bowl. Taste is pretty good, not the best I’ve had but not the worst by far. I would consider making again if I do not find another vegan recipe I like better.
