- 2 peaches (large, pitted and sliced)
- 1/2 cup cherries (pitted and halved)
- 1/4 cup toasted pecans
- 3/4 cup cooked quinoa (optional)
- croutons (Basil, :, optional)
- 1/4 cup oil (basil, see notes)
- 1 cup bread cubes (day-old, stale cubes absorb the oil better)
- balsamic vinaigrette
- 1/4 cup olive oil
- 3 Tbsp. balsamic vinegar
- salt (/pepper)

Changed recipe a bit grilled peaches with halloumi tossed cherries in rocket and topped with croutons and balsamic glaze.Delicious will definitely make again

Lovely. My husband, not a salad-lover, said it was an interesting and tasty dinner. This was my first introduction to halloumi cheese as well. Very tasty
