  • baking powder (1 1/2 tsp.)
  • ground ginger (1/4 tsp., or cinnamon, I used ginger)
  • salt (1/8 tsp.)
  • 2 tablespoons butter
  • 1/3 cup fat free yogurt (plain, i used 4 oz low carb vanilla yogurt)
  • 1 egg (slightly beaten)
  • 2 splenda (i would add 2 t or more, or stevia-in-the-raw granulated to the topping next time)
  • ground ginger (optional, additional, or cinnamon to sprinkle over topping)
  • 1/3 cup cold water
  • cornstarch (4 tsp., I used arrowroot starch, which is better for South Beach)
  • 2 tablespoons splenda (Stevia-in-the-Raw Granulated Sweetener or honey)
  • 3 cups peaches (peeled, sliced)
  • 2 cups blueberries (or fresh or frozen unsweetened rasberries)
  • 5 cups berries (peaches or 5 cups)
