Description
A tarte tatin is an upside-down pastry in which fruit is typically caramelized before the tart is baked. This peach tarte tatin is made with fresh peaches and a rich caramel sauce. Sprinkled with cinnamon and sugar, the peaches are then covered with the pie crust and baked for 30 minutes. After baking, the whole tarte is inverted and ready to serve. This recipe uses a premade pastry dough for the crust, however you can also make your own.

- 100 grams sugar
- 100 mL water
- 7 peaches (pitted and quartered)
- 1 tsp. cinnamon
- 1 roll (refrigerated pie crust)

Directions
- In a heavy-bottomed pot, add the 12 teaspoons of sugar and the 100 milliliters of water. On low heat, simmer until a golden caramel is formed.
- Pour the caramel into the bottom of a 21 centimeter tart or pie pan.
- Arrange the peach quarters over the caramel with the curved side up. Leave very little space between the peaches.
